Ever wondered how to make the most delicious vegan pulled pork that resembles the real thing, is smokey and sticky and can be eaten in a sandwich or burger bun? Me too, and that's why I decided to experiment making my own vegan pulled pork with my own bbq sauce.
My vegan pulled pork is actually quite meaty in texture, super filling and taste insanely good. I mean so good, you can't stop eating it. I made four servings worth and while they were meant to last us for lunch and dinner, they were all eaten in one go. I guess we can eat a lot, but having this delicious vegan pulled pork as our main dish sure helped.
The secret to the best vegan pulled pork
The secret to the best vegan pulled pork is simple: get the right ingredient with the right texture. As I discovered, the right ingredient is a king oyster mushroom. The stem is so meaty and gorgeous and not to mention incredibly versatile. I already made vegan scallops using this awesome mushroom, and oyster mushroom steak too. When I discovered I can shred it beautifully with a fork to resemble pulled pork, I knew this is going to be the right ingredient.
I used around 250g (9oz) of king oyster mushrooms to create enough vegan pulled pork for around 4 large burger buns. So let's make it together.
How to make amazing vegan pulled pork
The trick to vegan pulled pork is to make sure you cook it slowly. The idea is to allow the shredded mushroom to really cook throughout and also get that amazing flavour from the bbq marinade.
The first step to making vegan pulled pork is to first shred the stem of the king oyster mushroom. You can do it with a fork. You basically make some incisions with the fork then pull individual strands apart with your hands.
- 1 can (15 oz) tomato sauce
- 4 tbsp soy sauce
- 3 tbsp caster sugar
- 3 tsp liquid smoke
- 1 tbsp paprika
Mix all ingredients in a bowl and make sure you stir well until the sugar is fully dissolved. If you want, you can use brown sugar or unrefined cane sugar. They work fine, I tried and tested this recipe with those type of sugar also.
Add the shredded mushroom to the marinade and mix well until the mushroom is fully covered. Set aside for about 10-15 minutes.
How to slow cook vegan pulled pork
Add the vegan pulled pork mixture to a medium-sized non-stick saucepan. Heat up on the hob on medium heat until you bring it to a gentle boil. Simmer for 45 minutes, uncovered until the sauce becomes thick and sticky. Stir occasionally to ensure the vegan pulled pork doesn't stick to the pan.

You can serve it in a burger bun with a choice of toppings. We used reddish, purple cabbage and corn salad (lamb's lettuce). We ate it alongside a tomato salad, salty vegan crisps and physalis for its tarty taste.
As a quick note, you can add condiments to your burger, but since the vegan pulled pork was perfectly seasoned and saucy still, we didn't feel the need to add anything else. You can, however, add mustard or mayo or even chilli sauce if you want a bit of spice.
