How to make a delicious nectarine salad that's juicy and delicious.
A refreshing summer nectarine salad with healthy arugula, crunchy pine nuts and delicious basil vinegarette that you can put together in just a few minutes.
Summer is that perfect time of the year when we can indulge in a lot of fruit. And nectarines are always on our list. We normally buy so many that we end up using them in salads, foods and smoothies. We love a refreshing summer nectarine summer for lunch, which comes together in just a few minutes. It's delicious, healthy and gives us just the right energy boost to have a great rest of the day.
Let us share with you this super juicy and simple vegan nectarine salad that you'll want to enjoy over and over again. You can eat it as a side dish for dinner, or as a main for lunch. You can make it in advance and pack it for work as well. It stays fresh and just as tasty.
We sometimes use it as a side dish or appetizer for summer BBQs when serving vegan steaks, vegan sausages or chicken strips.
Ingredients for a vegan nectarine salad
The ingredients I'm using for this salad are so simple and tasty. They work so well together and I will tell you why.
Start by sourcing your juicy nectarines. You can do firm nectarines to make it easier to slice or delicious ripe ones if you want your salad sweeter and juicier.
Arugula is nice and peppery and the right leafy green for this nectarine salad. You can use another type of green leaf as well but we believe arugula tastes best!
You will need something to make the salad crunchy and pine nuts are incredible. We also tried it with walnuts and they also worked very well. We prefer pine nuts but if you have walnuts handy, the nectarine salad will still be a great success.
Finally, you'll need the ingredients for the dressing. Basil vinaigrette is an instant success for this recipe.
Add basil, olive oil, vinegar, a little agave syrup, salt and pepper together and you will have an incredible vinaigrette that will elevate your nectarine salad. The taste will be even more refreshing, bright and perfect.
Do you want more salad ideas that incorporate fruit or berries? We recommend this mango salsa, cantaloupe salad, Panzanella, citrus giant cous cous or carrot and mango salad. Delicious!
